How to Stay Healthy on a Road Trip with These 4 Recipes

  1. French Potato Salad

 

Sure, you probably have a cooler, but you know the competition for space on it. This recipe doesn’t need cooling at all. It serves four, and it takes only a couple of minutes to prepare.

Ingredients

  • Two pounds of cut into quarters potatoes
  • Four tablespoons of white wine vinegar
  • Salt and pepper to taste
  • One tablespoon of Dijon mustard
  • One tablespoon of chopped fresh tarragon
  • 1/3 cup of white wine vinegar
  • A medium of chopped shallot
  • Two tablespoons of chopped parsley

Preparation

  1. Boil your potatoes and add a teaspoon of salt. Continue until the potatoes are done. Drain.
  2. Put your potatoes in a bowl a layer at a time, and then start sprinkling each of it with two tablespoons of white wine vinegar, salt, and pepper. When the layers are done, do the dressing to pour over the potatoes.
  3. For the dressing, whisk the two tablespoons of white wine vinegar, together with salt and pepper, tarragon, Dijon mustard, and shallot. Set it aside.
  4. Egg Salad Sandwich

Stay healthy by avoiding restaurants and preparing your egg sandwich that you can make ahead or while on the road. Both the cheese and the bread in the recipe can last for days, but you can buy more when needed. This recipe can make six sandwiches. [The egg salad can last up to four days in the cooler.]

Ingredients

  • Eight large eggs
  • Three tablespoons of chopped shallots
  • One-fourth cup of mayonnaise
  • Two teaspoons of white wine vinegar
  • Salt and pepper to taste
  • Mayonnaise
  • Twelve slices of bread
  • Shredded romaine lettuce

Preparation

  1. Boil the eggs in a saucepan, but don’t cover it totally. When boiling, reduce the heat and then cover the saucepan. Cook the eggs for one minute. Take the pan off the heat and don’t remove the eggs from the hot water for 15 minutes.
  2. After, drain them, and run cold water over the eggs for up to five minutes. Peel and chop each of them. Add the remaining ingredients and mix them well.
  3. Spread the mayonnaise on the bread, and then add the egg salad. Top it with lettuce, and then add another bread or croissant on top and cut your sandwich into two.
  4. Macaroni Salad with Ham

Salads are perfect on-the-go meals that you will enjoy. It takes only a couple of minutes to prepare so do not hesitate making one just before leaving. You can chop the ingredients and put them in a container. This recipe can serve eight and last four days on the road.

Ingredients

  • A pound of elbow macaroni
  • Eight ounces of deli ham
  • ¾ cup of parsley
  • Two pieces of celery
  • Two and a half tablespoons of milk
  • Three tablespoons of lemon juice
  • One-half cup of mayonnaise
  • Salt and pepper to taste

Preparation

  1. Fill your large pot with water and bring it to a boil. Sprinkle some salt to the water.
  2. Dice your celery and ham, and chop the parsley
  3. Cook your macaroni until tender. Drain it and run with cold water to stop the cooking process. Set it aside to drain.
  4. Whisk the mayonnaise, milk and lemon juice in a bowl, and then add the macaroni, celery, parsley, ham, salt, and pepper. Mix them well. Store the salad in the cooler so that it can last up to four days.
  5. Tortilla Rollups

This easy to prepare 15-minute and delicious recipe is a perfect snack while on the go. You can prepare it ahead so that you can avoid eating out in restaurants serving salty and high-calorie foods. This recipe can make 25 servings.

Ingredients

  • Eight ounces of package cream cheese
  • One cup of softened sour cream
  • One package of dressing mix
  • A cup of salsa
  • One-half cup of shredded cheddar cheese
  • Ten pieces of flour tortillas

Preparation

  1. In your medium-sized bowl, combine the sour cream, cream cheese, salsa, dressing mix and cheddar cheese.
  2. Start spreading mixture into each tortilla.
  3. When done, roll the tortillas and chill them in the cooler until they are ready to serve.
  4. Slice the tortillas and arrange them on a platter.
